Ingredients1 medium onion, peeled and chopped
2 cloves garlic, peeled and crushed
2 fresh green chillies, crushed or finely chopped
2 chicken breasts, chopped all skin removed
224g can chopped tomatoes
1 tsp tomato puree
1 lemon or lime squeezed
1 tsp dried oregano
2 tbsp low fat fromage frais
200g cooked boiled brown or basmati riceMethodDry-fry the onion, garlic and chillies until softened.
If the mixture begins to stick add 1 tbsp of water.
Add the chicken and stir continuously for 4-5 minutes.
Stir in the tomatoes, tomato puree, lemon or lime juice and oregano.
Bring to the boil, reduce the heat, and then simmer for 20 minutes.

Ingredients336g lean ham roughly chopped
448g courgette thinly sliced
224g turnip thinly sliced
224g can baked beans in tomato sauce
448g mushrooms, thinly sliced
224g carrots thinly sliced

400g can chopped tomatoes

Place all ingredients in a non-stick pan, bring to the boil, cover, and simmer for 15-20 minutes, stirring occasionally

Ingredients120g pasta (uncooked weight)
185g tuna in brine, drained
1 small red pepper, diced
84g canned sweet corn
1 pack Schwartz tuna and sweet corn pie mix
300ml skimmed milk
Freshly chopped parsley
Freshly ground black pepper
100g reduced fat mature cheese, gratedMethodBoil the pasta until tender, drain well and then place in an ovenproof dish.
Sprinkle over the flaked tuna, diced pepper and sweet corn.
Mix the sauce mix into the milk until well blended, then heat until thickened, stirring all the time.
Pour the sauce over the pasta, season with pepper and parsley.
Sprinkle over the cheese and bake at 190c / 375F/Gas Mark 5 for 25-30 minutes until golden brown.

Serves 4
Ingredients450g lean pork fillet, cubed
1 medium onion, chopped
16 dried apricots, 'no need to soak' variety
8 stoned prunes, 'no need to soak' variety or dried apple rings
2 whole cloves
½ cinnamon stick or 1 tsp ground cinnamon
salt and black pepper
150ml glass dry white wine
a little chicken stock
1 level tbsp plain flourMethodArrange the pork cubes and onion in a casserole dish and add the fruit, spices and seasoning.
Pour over the wine and then add stock to barely cover.
Sieve the flour over the casserole.
Cook at 150C/300F/Gas mark 2 for 1 hour, stirring halfway through cooking time.
Before serving, remove the cinnamon stick and check the seasoning.

Ingredients4 skinless chicken fillets
1 onion, chopped
2 large oranges, segmented
150ml orange juice
150ml white wine
1 tsp corn flour
224g apricots (fresh or tinned in own juice), chopped
Chopped parsleyMethodPlace onion, orange juice and wine in saucepan. Simmer until tender.
Mix corn flour with a little water and add to sauce. Bring to boil, stirring all the time.
Place chicken in casserole. Pour over sauce, season with salt and freshly ground black pepper.
Cover and cook 180c/350f/Gas4 for 30-40 minutes.
Add apricots and cook for further 10-15 minutes until chicken and apricots are tender. Add orange segments and cook for further 5 minutes.
Sprinkle with chopped parsley & serve.

1 tbsp mixed dried herbs
300ml water
Salt and freshly ground black pepper to taste
4 rashers lean baconMethodPlace the carrots, onion, garlic, and mushrooms in a large non-stick pan and dry-fry until the onion and mushroom softens, adding a little water if necessary.
Add the beans, tomatoes, mixed herbs and water, and season with salt and pepper.
Bring to the boil and leave to simmer.
Grill the bacon and remove any rind.
Cut into small pieces and add to the soup.
Simmer for 30 minutes or until the carrots are soft.
