Cauliflower soup

Ingredients

  • 1 medium cauliflower, broken into florets
  • 1 onion, chopped
  • 1 carrot, sliced
  • 2 stalks celery, sliced
  • 1 small potato, chopped
  • 600ml stock
  • 300ml skimmed  milk
  • ¼ tsp ground nutmeg
  • Black pepper
  • Pinch mixed dried herbs or 2 tsp fresh

Method

  1. Place stock in saucepan.
  2. Add vegetables and herbs.
  3. Bring to boil and simmer on low heat for 15-20 minutes.
  4. Cool slightly and puree.
  5. Return to saucepan.
  6. Add milk, nutmeg and seasoning, and serve.

Winter warmer soup

Ingredients

  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, peeled and crushed
  • 112g mushrooms, sliced
  • 224g can baked beans
  • 224g can chopped tomatoes
  • 1 tbsp mixed dried herbs
  • 300ml water
  • Salt and freshly ground black pepper to taste
  • 4 rashers lean bacon

Method

  1. Place the carrots, onion, garlic, and mushrooms in a large non-stick pan and dry-fry until the onion and mushroom softens, adding a little water if necessary.
  2. Add the beans, tomatoes, mixed herbs and water, and season with salt and pepper.
  3. Bring to the boil and leave to simmer.
  4. Grill the bacon and remove any rind.
  5. Cut into small pieces and add to the soup.
  6. Simmer for 30 minutes or until the carrots are soft.
  7. Add extra water if required.
  8. Serve immediately.
