Cauliflower soup
Ingredients
- 1 medium cauliflower, broken into florets
- 1 onion, chopped
- 1 carrot, sliced
- 2 stalks celery, sliced
- 1 small potato, chopped
- 600ml stock
- 300ml skimmed milk
- ¼ tsp ground nutmeg
- Black pepper
- Pinch mixed dried herbs or 2 tsp fresh
Method
- Place stock in saucepan.
- Add vegetables and herbs.
- Bring to boil and simmer on low heat for 15-20 minutes.
- Cool slightly and puree.
- Return to saucepan.
- Add milk, nutmeg and seasoning, and serve.

Winter warmer soup
Ingredients
- 2 carrots, sliced
- 1 onion, chopped
- 2 cloves of garlic, peeled and crushed
- 112g mushrooms, sliced
- 224g can baked beans
- 224g can chopped tomatoes
- 1 tbsp mixed dried herbs
- 300ml water
- Salt and freshly ground black pepper to taste
- 4 rashers lean bacon
Method
- Place the carrots, onion, garlic, and mushrooms in a large non-stick pan and dry-fry until the onion and mushroom softens, adding a little water if necessary.
- Add the beans, tomatoes, mixed herbs and water, and season with salt and pepper.
- Bring to the boil and leave to simmer.
- Grill the bacon and remove any rind.
- Cut into small pieces and add to the soup.
- Simmer for 30 minutes or until the carrots are soft.
- Add extra water if required.
- Serve immediately.
