Cheesy ratatouille

Ingredients

  • 112g/4oz courgettes, sliced
  • 112g/4oz aubergine, sliced
  • 1 medium onion, sliced
  • 1 red, green and orange pepper, sliced
  • large can tomatoes
  • clove garlic, crushed
  • 2 tsp oil
  • salt and black pepper to taste
  • 1 medium egg
  • small glass semi skimmed milk
  • 56g/2oz low fat cheddar cheese, grated
  • 28g/1oz breadcrumbs

Method

  1. Heat oil in non-stick ovenproof pan and stir-fry onion.
  2. Add garlic and all other vegetables except tomatoes and stir-fry for few minutes until soft.
  3. Add tomatoes and seasoning.
  4. Cover and simmer for 20-30 minutes
  5. Mix the egg, milk and half the cheese and pour over vegetables.
  6. Sprinkle remaining cheese and breadcrumbs over and bake in moderate oven 180c/350f/Gas4 for 20-30 minutes until browned
