Cheesy ratatouille
Ingredients
- 112g/4oz courgettes, sliced
- 112g/4oz aubergine, sliced
- 1 medium onion, sliced
- 1 red, green and orange pepper, sliced
- large can tomatoes
- clove garlic, crushed
- 2 tsp oil
- salt and black pepper to taste
- 1 medium egg
- small glass semi skimmed milk
- 56g/2oz low fat cheddar cheese, grated
- 28g/1oz breadcrumbs
Method
- Heat oil in non-stick ovenproof pan and stir-fry onion.
- Add garlic and all other vegetables except tomatoes and stir-fry for few minutes until soft.
- Add tomatoes and seasoning.
- Cover and simmer for 20-30 minutes
- Mix the egg, milk and half the cheese and pour over vegetables.
- Sprinkle remaining cheese and breadcrumbs over and bake in moderate oven 180c/350f/Gas4 for 20-30 minutes until browned
